Description

These spring berry yogurt parfaits layer creamy chia-infused Greek yogurt with crunchy granola and mixed seasonal berries for a colorful, nutritious breakfast. They are quick to assemble, portable, and perfect for meal prep or weekend brunch.


Ingredients

  • 2 cups plain greek yogurt
  • 2 tablespoons chia seeds
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • 1 cup granola
  • 2 cups mixed seasonal berries
  • fresh mint leaves (optional)

  • Instructions

    1. combine greek yogurt chia seeds honey and vanilla extract in a bowl and stir until well mixed

    2. let the yogurt mixture rest for 10 minutes to allow chia seeds to thicken

    3. wash and dry the berries then slice larger ones into bite sized pieces

    4. spoon a layer of chia yogurt into the bottom of each jar

    5. add a layer of mixed berries followed by a layer of granola

    6. repeat layers until jars are filled finishing with berries and a sprinkle of granola

    7. garnish with mint leaves if desired

    8. seal the jars and refrigerate for up to three days keeping granola separate for maximum crunch
