1. 1. Preheat your oven to 375 F (190 C). Lightly grease an 8×8 inch baking dish with butter or cooking spray.
2. 2. In a large mixing bowl, whisk together the cottage cheese and milk until well combined.
3. 3. In a separate small bowl, whisk together the flour, baking powder, salt, and black pepper. Gradually add this dry mixture to the cottage cheese mixture, stirring until just combined. Do not overmix.
4. 4. Gently fold in half of the shredded cheddar cheese (1/2 cup) and the cooked breakfast sausage or bacon bits (if using). If using, fold in the green onions or chives now as well.
5. 5. Pour the entire mixture evenly into your prepared 8×8 inch baking dish. Spread it out gently with a spatula.
