  • 1 cup fresh strawberries, hulled and diced
  • 1 cup fresh blueberries
  • Popsicle molds

  • Instructions

    1. Prepare the Yogurt Mixture: In a medium bowl, combine the plain Greek yogurt, honey (or maple syrup), and vanilla extract. Stir everything together until it’s well combined and smooth. Taste and adjust the sweetness if desired. This will be your “white” layer.

    2. Prepare the Strawberry Layer: Take about half of your diced strawberries and place them in a small bowl. Lightly mash them with a fork or the back of a spoon. You want them to be somewhat chunky, not a complete puree. This will be your “red” layer.

    3. Prepare the Blueberry Layer: In another small bowl, lightly mash about half of your blueberries. Similar to the strawberries, keep some texture for visual appeal. This will be your “blue” layer.

    4. Layer the Popsicle Molds: Begin by spooning a small amount of the mashed strawberry mixture into the bottom of each popsicle mold. Aim for about one-third of the mold’s capacity for the first layer.

    5. Add the White and Blue Layers: Carefully spoon a layer of the plain yogurt mixture over the strawberry layer. Then, gently add a layer of the mashed blueberry mixture. Repeat the layers if you have enough space, ending with a final layer of yogurt or fruit.

    6. Insert Sticks and Freeze: Once all the molds are filled with the layered mixtures, insert your popsicle sticks into the center of each mold. Place the filled molds in the freezer on a flat surface.

    7. Allow to Freeze Completely: Let the popsicles freeze for at least 4-6 hours, or preferably overnight, until they are solid. To easily remove them, run the molds under warm water for a few seconds.
