Ingredients

Scale
  • 1 1/2 cups rolled oats
  • 3/4 cup vanilla protein powder
  • 1/2 cup unsweetened applesauce
  • 1/3 cup almond butter
  • 1 to 2 tablespoons honey or maple syrup (optional)
  • 1 to 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon vanilla extract
  • pinch of salt

  • Instructions

    1. In a mixing bowl combine oats, protein powder, cinnamon, and salt.

    2. Add applesauce, almond butter, vanilla extract, and honey or maple syrup if using, then stir until a sticky dough forms.

    3. If the mixture is too dry, add a bit more applesauce; if too wet, add a spoonful of oats.

    4. Use a spoon or cookie scoop to portion and roll into 1-inch balls.

    5. Place the balls on a tray lined with parchment paper and refrigerate for 20 to 30 minutes to firm up.

    6. Store bites in an airtight container in the refrigerator for up to 7 days or freeze for up to 3 months.
