It’s a dish that feels special but comes together with minimal effort.

Ingredients

Scale
  • 2 cups rolled oats (old-fashioned oats)
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon lemon zest (from about 1 lemon)
  • 1 1/2 cups milk (dairy or non-dairy)
  • 1/4 cup melted unsalted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh or frozen blueberries
  • 1 tablespoon fresh lemon juice
  • optional: extra lemon zest or a drizzle of maple syrup for serving

  • Instructions

    1. Preheat your oven to 375 F (190 C). Lightly grease an 8×8 inch baking dish with butter or non-stick cooking spray.

    2. In a large mixing bowl, whisk together the rolled oats, granulated sugar, baking powder, salt, and lemon zest. Make sure everything is well combined.

    3. In a separate medium bowl, whisk together the milk, melted butter, egg, and vanilla extract until smooth.

    4. Pour the wet ingredient mixture into the dry ingredients. Stir gently with a spoon or spatula until just combined. Do not overmix.

    5. Gently fold in the blueberries and fresh lemon juice. Distribute them evenly throughout the mixture. If using frozen blueberries, there’s no need to thaw them first.

    6. Pour the entire mixture into your prepared baking dish. Spread it evenly. Bake for 30-35 minutes, or until the top is golden brown and the center is set.

    7. Allow the baked oatmeal to cool for 5-10 minutes before serving. This allows it to set up a bit more and makes it easier to cut into portions.
