  • 1 1/2 lbs bone-in chicken thighs
  • 8 cups chicken broth
  • 6 oz egg noodles
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 bay leaf
  • 1/2 teaspoon dried thyme
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 2 tablespoons chopped parsley
  • 1 tablespoon lemon juice (optional)

  • Instructions

    1. Heat olive oil in a large pot over medium heat

    2. Add onion, carrots, and celery and cook until softened

    3. Stir in garlic and cook briefly until fragrant

    4. Place chicken thighs in the pot and pour in chicken broth

    5. Add bay leaf, thyme, salt, and pepper and bring to a gentle boil

    6. Reduce heat and simmer for 25 minutes, skimming foam as needed

    7. Remove chicken, shred the meat, and discard bones and skin

    8. Return shredded chicken to the pot and stir in egg noodles

    9. Cook noodles in the soup until tender

    10. Adjust seasoning and stir in parsley and lemon juice before serving
