  • 1 cup plain Greek yogurt (full-fat or 2% for best creaminess)
  • 1 cup cottage cheese (small curd, full-fat or 2%)
  • 1/2 cup buffalo sauce (such as Frank’s RedHot Buffalo Wing Sauce)
  • 1/4 cup crumbled blue cheese (optional, for topping)
  • 1/4 cup chopped fresh spinach
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste

  • Instructions

    1. Preheat your oven to 375 F (190 C). Lightly grease an 8×8 inch baking dish or a similar-sized oven-safe serving dish with cooking spray or a little olive oil.

    2. In a large mixing bowl, combine the shredded cooked chicken, plain Greek yogurt, cottage cheese, and buffalo sauce. Stir everything together until the chicken is evenly coated and the mixture is well combined.

    3. To the chicken mixture, add the garlic powder, onion powder, salt, and black pepper. Stir in the chopped fresh spinach until it’s evenly distributed throughout the dip.

    4. Spoon the entire mixture into your prepared baking dish. Use the back of a spoon or a spatula to spread it out evenly.

    5. If using, sprinkle the crumbled blue cheese evenly over the top of the dip.

    6. Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the dip is hot and bubbly around the edges and the top is lightly golden. If you want a more browned top, you can briefly switch to the broiler for the last 1-2 minutes, watching carefully to prevent burning.

    7. Once baked, carefully remove the dish from the oven. Let the dip rest for about 5 minutes before serving. Serve warm with your favorite dippers.
