  • 1/4 cup ranch dressing
  • 1/4 cup blue cheese crumbles (optional, for topping)
  • 2 tablespoons fresh chives, chopped (for garnish, optional)
  • Assorted dippers: celery sticks, carrot sticks, bell pepper strips, tortilla chips, pita bread, crackers

  • Instructions

    1. Prepare the Chicken: If you’re not using pre-cooked chicken, cook two chicken breasts until thoroughly done. Once cooled slightly, shred the chicken using two forks or dice it into small pieces. You should aim for about 2 cups of shredded chicken.

    2. Blend the Cottage Cheese: In a food processor or high-speed blender, add the entire 16 ounces of cottage cheese. Blend until completely smooth and creamy, with no visible curds remaining.

    3. Combine Ingredients: In a large mixing bowl, combine the blended cottage cheese, shredded chicken, and buffalo wing sauce. Stir everything together thoroughly until the chicken is evenly coated and the mixture is well combined.

    4. Add Ranch Dressing: Pour in the ranch dressing and stir again until it’s fully incorporated into the buffalo chicken mixture.

    5. Transfer to Baking Dish: Spoon the entire dip mixture into an 8×8 inch or similar-sized oven-safe baking dish. Spread it out evenly with the back of a spoon.

    6. Bake the Dip: Preheat your oven to 375 F (190 C). Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the dip is hot, bubbly around the edges, and slightly golden on top. If you’re adding blue cheese crumbles, sprinkle them over the top during the last 5-10 minutes of baking.
