  • 2 cups cottage cheese (full-fat or low-fat, depending on preference)
  • 1/2 cup buffalo sauce (such as Frank’s RedHot)
  • 1/4 cup ranch dressing (light or regular)
  • 1/4 cup blue cheese crumbles (optional, for topping)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Pinch of salt
  • Pinch of black pepper
  • Fresh chives or green onions, chopped (for garnish)

  • Instructions

    1. Preheat your oven to 375 F (190 C). Lightly grease an 8×8 inch baking dish or a similar-sized oven-safe dish with cooking spray.

    2. Shred or finely dice your cooked chicken into small pieces, about the size of your thumbnail.

    3. In a food processor or blender, combine the cottage cheese, buffalo sauce, ranch dressing, garlic powder, onion powder, salt, and pepper. Blend until the mixture is smooth and creamy, with no visible curds.

    4. In a large mixing bowl, combine the shredded chicken with the blended cottage cheese mixture. Stir thoroughly until the chicken is completely coated and evenly distributed.

    5. Pour the chicken and cottage cheese mixture into your prepared baking dish. Spread it out evenly. Place the dish in the preheated oven and bake for 20-25 minutes, or until the dip is bubbly around the edges and heated through, with a slight golden crust forming on top.

    6. If using, sprinkle the blue cheese crumbles over the hot dip during the last 5 minutes of baking, or immediately after removing it from the oven. Garnish with fresh chopped chives or green onions. Serve warm with your favorite dippers.
