Description

Crispy on the outside and tender inside, these herb and garlic roasted vegetables make an easy, flavorful side dish that complements any meal. With simple pantry ingredients and a quick roasting method, they’re perfect for weeknight dinners or special occasions.


Ingredients

  • 4 cups mixed vegetables (carrots, zucchini, bell peppers, potatoes, red onions), chopped
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped

  • Instructions

    1. Preheat oven to 400°F (200°C).

    2. Pat vegetables dry and place in a large mixing bowl.

    3. Add olive oil, garlic, sea salt, black pepper, rosemary, and thyme; toss to coat evenly.

    4. Spread vegetables in a single layer on a parchment-lined baking sheet.

    5. Roast for 15 minutes, then use a spatula to turn each piece.

    6. Continue roasting for 15 minutes or until edges are golden and vegetables are tender.

    7. Remove from oven and serve immediately.
