1. Heat olive oil in a large pot over medium heat.
2. Add onion and sauté until translucent.
3. Stir in garlic carrots and celery and cook until slightly softened.
4. Add potatoes parsnips diced tomatoes and broth.
5. Season with thyme rosemary bay leaf salt and pepper.
6. Bring to a boil then reduce heat and simmer covered until vegetables are tender.
7. Remove bay leaf then stir in parsley and lemon juice.
8. Adjust seasoning if needed and serve hot.
