Healthy Cottage Cheese Cheesecake

  • Total Time: 40-45 minutes active (plus 2+ hours cooling)
  • Yield: 8 servings 1x

Description

This healthy cottage cheese cheesecake is a creamy, light, and protein-packed dessert that’s easy to make and perfect for satisfying your sweet tooth without guilt. It’s a simple recipe designed for busy schedules, offering a delicious treat that fits into a balanced lifestyle.

Ingredients

Scale
  • 1 1/2 cups cottage cheese (full-fat or low-fat, depending on preference)
  • 1/4 cup Greek yogurt (plain, full-fat or low-fat)
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch or arrowroot powder
  • 1 large egg
  • Pinch of salt
  • Graham cracker crust (store-bought or homemade, 9-inch)
  • optional: fresh berries or a drizzle of chocolate for topping

  • Instructions

    1. Preheat Your Oven and Prepare the Crust: Start by preheating your oven to 350 F (175 C). If you’re using a store-bought graham cracker crust, simply unwrap it. If you’re making your own, press the mixture firmly into a 9-inch pie plate.

    2. Blend the Filling Ingredients: In a blender or food processor, combine the cottage cheese, Greek yogurt, maple syrup (or honey), vanilla extract, cornstarch, egg, and a pinch of salt. Blend until the mixture is completely smooth and creamy, with no visible lumps of cottage cheese. This usually takes 2-3 minutes, scraping down the sides as needed. The smoother the blend, the creamier your cheesecake will be.

    3. Pour into the Crust: Carefully pour the smooth cottage cheese mixture into your prepared graham cracker crust. Gently tap the pie plate on the counter a few times to release any air bubbles.

    4. Bake Until Set: Place the cheesecake in the preheated oven and bake for 30-35 minutes. You’ll know it’s done when the edges are lightly golden and the center is mostly set but still has a slight jiggle when you gently shake the pan. Avoid overbaking, as this can lead to a dry texture.

    5. Cool Gradually: Once baked, turn off the oven and prop the oven door open slightly. Let the cheesecake cool in the oven for about 15-20 minutes. This slow cooling helps prevent cracking.

    6. Chill Thoroughly: Remove the cheesecake from the oven and let it cool completely on a wire rack at room temperature. Once cooled, transfer it to the refrigerator and chill for at least 2 hours, or ideally 4 hours, before serving. The longer it chills, the firmer and more delicious it will be.
