  • 3 cups cooked whole grain pasta
  • 2 cups cooked chicken breast, sliced
  • 2 ripe avocados, diced
  • 1 1/2 cups cherry tomatoes, halved
  • 1/2 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • salt and pepper to taste

  • Instructions

    1. Bring a large pot of salted water to a boil and cook the pasta until al dente, then drain and toss with 1 tablespoon olive oil to prevent sticking.

    2. Grill or sauté the chicken breast until fully cooked, let rest, then slice into bite-sized pieces.

    3. In a large bowl combine the cooled pasta, sliced chicken, cherry tomatoes, and chopped basil.

    4. In a small bowl whisk together remaining olive oil, lemon juice, minced garlic, salt, and pepper to create the dressing.

    5. Add the diced avocado to the serving bowl and gently pour the dressing over all ingredients, tossing lightly to coat without mashing the avocado.

    6. Serve immediately at room temperature or chill in the refrigerator for 20–30 minutes for a refreshing cold salad.
