Description

  • 67 medium yellow squash, sliced
  • 1 medium onion, finely chopped
  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • ½ cup cream or whole milk
  • 2 tablespoons butter
  • ½ cup breadcrumbs or crushed crackers
  • salt and black pepper to taste
  • optional herbs (thyme, parsley, or dill)

  • Instructions

    1. Preheat the oven to 350°F (175°C).

    2. In a skillet, melt butter and sauté sliced squash and chopped onion until softened.

    3. In a mixing bowl, whisk together eggs, cream, salt, and pepper, then stir in half the shredded cheese.

    4. Fold the sautéed vegetables into the egg-cheese mixture.

    5. Transfer the mixture to a greased baking dish.

    6. Top with remaining cheese and sprinkle breadcrumbs or crushed crackers evenly.

    7. Bake for 25–30 minutes until set in the center and golden on top.

    8. Allow to cool slightly before serving.
