  • 1/3 cup vegetable oil
  • 2 large eggs

  • 1 1/2 cups grated carrots
  • 1/2 cup crushed pineapple drained
  • 1/2 cup chopped walnuts (optional)
  • 1/4 cup raisins (optional)
  • 4 ounces cream cheese softened
  • 2 tablespoons butter
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract

  • Instructions

    1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.

    2. Whisk flour, rolled oats, baking powder, baking soda, cinnamon, and nutmeg in a bowl.

    3. Beat brown sugar, oil, eggs, and vanilla extract in another bowl until smooth.

    4. Stir in grated carrots and crushed pineapple until evenly combined.

    5. Fold dry ingredients into the wet mixture without overmixing.

    6. Gently fold in walnuts and raisins if using.

    7. Spread batter into the prepared pan and smooth the top with a spatula.
