4. Pat the chicken pieces dry with paper towels to remove excess moisture.
5. Dip each chicken piece into the egg mixture, then coat evenly with the breadcrumb mixture, pressing gently to adhere.
6. Place coated chicken pieces on the prepared baking sheet in a single layer, leaving space between each piece.
7. Drizzle or spray 1 tablespoon of olive oil over the coated chicken to promote browning.
8. Bake for 18–22 minutes, turning once halfway through, until golden brown and cooked through (internal temperature 165°F/74°C).
9. If desired, broil for 2–3 minutes for extra crispness, watching carefully to prevent burning.
