2. In a large bowl combine rice, soup, broth, garlic, onion, herbs, salt, and pepper.
3. Arrange chicken pieces evenly over the rice mixture and season with salt and pepper.
4. Scatter frozen vegetables over the chicken and rice.
5. Sprinkle cheese and optional breadcrumbs or crackers on top.
6. Cover dish tightly with foil and bake for 40 minutes.
7. Remove foil and bake an additional 15–20 minutes until rice is tender and top is golden.
8. Let casserole rest for 10 minutes before serving
